Butternut Squash
Curcurbita moschata
This winter or storage squash is very popular with an abundance of sweet nutty flesh. The oblong, tan-skinned fruits grow about 8-12 long and are larger at one end. The seed cavity is small. The fruit is excellent when roasted, steamed, or cooked in the microwave for use in soups, breads, muffins and casseroles. Butternut squash will store extremely well.
Beans, corn, icicle radishes, cucumber, melon, mint, onions and pumpkins are great companion plants for squash. Marigolds, nasturtium and oregano will provide some pest protection. Squash and potatoes should not be planted together.
